PORT PRODUCTION
Great Port-style wine is a result of the marriage of high quality
grape brandy with luscious and aromatic wine. Our White Portstyle
wine production begins with the production of grape
brandy. Each spring we evaluate our Viognier barrels from the
previous vintage and determine if any will be destined for
brandy distillation for our white port program. If we have any
perfect barrels they are sent to the distillery to become the
brandy. Then it is time to focus on the harvest of our Viognier
grapes. These grapes are harvested at approximately 28 Brix,
pressed, and fermented cold and slow to preserve aromatics.
When the appropriate amount of sugar has been converted to
alcohol we stop fermentation with the addition of our grape
spirits made the previous spring. The resulting wine is aged in
French oak barrels for 3 to 4 years before it is bottled and
released.
Tasting Notes
This medium-to-full bodied port-style dessert wine begins with
wonderful aromas of geranium, orange blossoms, white peach
and lychee fruit. A soft, silky entry on the palate expresses
flavors of lemon curd, baked bread, oily nuts and tangy golden
raisins. Pair our White Port with Marcona almonds or mix it with
tonic as an apéritif.
