Ingredients
- 4 ears of fresh corn (husked)
- 1½ tbsp mayonnaise
- 1 garlic clove (minced)
- 1 lime (zested and juiced)
- ⅓ cup scallions (chopped)
- ¼ cup crumbled feta cheese
- ¼ cup fresh cilantro (finely chopped)
- ¼ tsp smoked paprika
- 1 jalapeno pepper (seeded and diced)
- -0.2525 tsp sea salt
Directions
You can char the corn on the grill or gas stove-top. If using the grill, preheat a to medium-high. Grill until char marks form. Remove from grill and set aside.
In a large bowl, combine the mayo, garlic, and lime zest and juice. Slice the kernels off the corn and add to the bowl along with the scallions. Stir to coat, then add the cheese, cilantro, smoked paprika, jalapeño, and salt. Season to taste and serve immediately or chill until ready to serve. ** This can be served as a side salad, or as a dip with corn chips.
